Minute spinach

From Vegetable Dishes I Can’t Live Without by Mollie Katzen
Serves 4

1 pound fresh Spinach leaves
3-4 tablespoons water
Salt to taste
One clove of minced or crushed garlic

  1. Wash spinach. Shake to remove most of water. Place water in medium sized microwave bowl (if using microwave) or pot (if using stove). Microwave the bowl on high power for 1 minute if using the microwave or cook in the pot on medium high heat for 1 minute if using the stove.
  2. Remove from heat and season to taste with salt and garlic. Add a little oil on top if desired.

Other Salad Suggestions
Wash and dry spinach. Use cut up tomatoes and red onion. If available, can add hard boiled egg. Finish with dressing of your choice.
